Since about a week ago, Samsung Health has stopped syncing it seems. Uninstalled and reinstalled and it synced for the first time only. When sync now button is pressed, it appears to sync, but the date and time does not change. Any solutions, please?

I did that, but it is still the same.
Samsung is still sleeping.
Today a new version has appeared in Play Store (6.10.5.031) and seems to be ok.

Yesterday, I uninstalled (updates) and reinstalled the Samsung Health App updates. Mysteriously it started to work again. Same old version 6.10.0.041.
It seems we Samsung users have no choice but to wait until 'miracles' happenwhen there is any issue.
just update to new version , it will fix
