you can manually change the date and time of a photo by heading to the Gallery app > Tap on a photo > Swipe upwards > Edit > Tap on the date and time > Make the necessary changes > Done
I don't believe there is an automated route for this.

If you talking about water mark
You can go to camera settings press on watermark option turn it on and select what you want to display.

@BCTVProductions: If the image has been sent to you then, unless it has a watermark, the date and time shown in the Gallery will reflect when it was downloaded. For instance, if you receive an image on WhatsApp, and it auto downloads to your Gallery, then the date and time it was received on WhatsApp will be shown in the image details. As far as I am aware, this cannot be adjusted in the Settings.
