I am looking to purchase an american fridge freezer with a chilled water/ice dispenser. I will not be able to hook up a water supply for some time so cant use the dispenser which is ok, but will the fridge freezer run ok if it is disconnected?

Yes, the Fridge/Freezer simply needs to be plugged into the mains. The plumbing is only needed for the water/ice dispenser.
