For some reason I can't update to 6.1 or oneui 7. I have been told that my z fold 3 might be a demo device but I can use the phone as normal. Can someone help PLEASEE!!

O2 phone & probably firmware albeit unlocked. I suspect therein lies the issue, expecting an O2 issued firmware. Try maybe with O2 sim and or smart switch software. That's assuming O2 issued updates for that model
