I cannot even begin to express my hate of the new UI. I really liked my phone and its professional look and all the features you could tweak for your convenience. Now it is feels like a toy phone with its kid friendly icons and more intuitive theme for the mentally challenged. I really think that this new One UI should be only as accessibility options.
I would really like to have the option to revert back all the changes. I would realy like to have the power to customize my device the way I want. The way it suits me.
If this doesn't happen the I guess I will be switching the brand because I believe Samsung has taken the wrong path and they won't be willing to revert back to customizable friendly experience.

As a person isn't easily able to revert / rollback to a previous firmware then the other options are in the interim...
Another launcher such as Nova Prime.
Icon Pack.
Alternative Samsung Theme.
Other options are I can't advise here how to roll back firmware.
Please use Google Search and or look on the xdadevelopers site to learn how.
A person doing this does so at their own sole responsibility knowing that a phone can be put Into an unusable state and possible manufacturing warranty being voided.
Daily Driver > Samsung Galaxy s²³ Ultra 512Gb in Phantom Black.
The advice I offer is my own and does not represent Samsung’s position.
I'm here to help. " This is the way. "

I cannot agree more. They turned a piece of luxury, preofessionalism and sophistication into a joke! I am fuming furious. While Google started to annoy me already with continously tracking everything I do and violating my privacy on top of their hideous GUI looks, it is sad to see that Samsung follows their bad decisions in the GUI design.

Android is a highly customisable operating system and there are many ways to tweak the look and feel of the OS to your liking. Hopefully you'll be able to find a solution! But it is your choice and you can revert to Oreo using Odin if you want to (as long as your current bootloader version and the bootloader version of the firmware you want to flash are the same).
