@Trevone: Bixby can't be disabled, as it is a preinstalled software feature. What I'd recommend is heading to Settings > Advanced Features > Side Key > Double Press, and select 'Quick launch camera' or 'Open app' and choose your preferred app for this action. Now, select 'Power off menu' for the Press and Hold option, and this will limit your interactions with Bixby.
Furthermore, head to Settings > Battery and Device Care > Battery > Background Usage Limits, and add any Bixby features to the Sleeping and Deep Sleeping Apps, to prevent them from working in the background. I hope this helps.
