Is it possible to have my default backup for my phone as Google and not OneDrive?

Yes
I am not employed by Samsung nor do I receive any remuneration as a Samsung Members Star.

My device is an S25 Ultra.

For photos yes. If you don't link your OneDrive account to Samsung, and Google Photos has automatic backup on, then it will backup on Google Photos instead of OneDrive

You are in Samsung Cloud there, that is why it is backing up to One Drive

Also all my backup picture albums are in DCIM which Facebook/WhatsApp can't see them so when I move them to Pictures, I can view but not edit etc, they download and go back into DCIM

Go to gallery settings and turn off sync to OneDrive. You need to download Google photos app and it will then backup your photos and videos. You only get 5gb of storage for free. 100gb is £1.49 a month. If you or any of your family have Amazon prime then you can get unlimited photo backup with the Amazon photos app.

It's unlimited but not headache free.

Note that the Amazon Prime Photos app will back up (as it's a valid image file) but can't display a preview of the RAW files Samsung ExpertRaw uses as it doesn't embed a preview. It's fine with the standard RAW from Samsung Camera App Pro mode though. It's quite annoying.

It can also be fussy with naming suffixes, so you have to rename without () If you have made multiple versions of an image.

It will let you zoom on a JPG, HEIC, DNG (Pro or 3rd Party App) however if you have ever save any of your edited high resolution images out to PNG it can be a bit weird displaying these.

Full screen previews can be a bit slower to load than Google Photos as well but it's easy enough to download the original.

Edit: Forgot to mention it also doesn't support Samsung motion images. I don't use live images so I hadn't thought of them but it's a shame as it does with Apple's.
