Currently, my S23 Ultra refuses to complete a backup for some reason. I have tried FIVE TIMES today and, each time, it gives up after around half an hour! To be fair, it's never been fast at backups, always taking over an hour, unlike my S21 Ultra! Doesn't even give any reason why. Any ideas please 🙏

I'm not sure why the backup isn't completing, however this may be due to a temporary server issue. I did note that you had an unusually high number of apps (1025) which might cause some issues in the backup process. You could try connecting to a charger, connecting to Wi-Fi, then allowing the automatic backup process to kick in, to see if this helps. Alternatively, please try again in 24 hours to allow time for any temporary server issues to be resolved.

Is your phone close to it's internal storage capacity 🤔
Or if an upload is over 1Gb this can cause issues.
Sometimes switching to Wi-Fi or Mobile Data or visa versa can help.
Also try > Clear Cache Files from the phone's System Partition Section > https://www.samsung.com/uk/support/mobile-devices/how-do-i-clear-the-cache-on-my-device/ You may need to insert your earphones or hook upto a powered On Laptop or use a Tv's USB Port to access the Clear Partition Section. This may help with lag or stutters as this clears the phone of old/unused or broken cache files.There is also a Repair Apps option in the Menu System too { Possibly excluding the s²⁴ Series of phone's }

Also re the S25, yeah if I'm honest, I am a bit annoyed I didn't listen to all the pre-reviews before ordering. I should have stuck with my S24+, but the deals on Samsungs website sucked me in! Its basically the same phone!
