I bought my s22 Ultra straight from Samsung.

After the update my phone has been weird. It would stay on do not disturb mode even when I've turned it off, screen becomes non responsive occasionally, it would randomly restart even when I'm talking to someone, it would give me a grey scale, I thought it was a theme but when all my pictures were black and white I realised it must be going crazy. 

Anyone had similar problems? How did you solve them?

It was same on my s22 ultra when i was on one ui 5 beta version but after official update that problem was gone. You can try to delete scheduled do not disturb modes & try reset settings that also might help.

Sound like the ′problem′ that was experienced during the beta.
Look at Modes and Routines in Settings and then look at the Sleep Mode. There is a setting which turns on Do Not Disturb and other features automatically based on what it thinks your behaviour patterns are.
If you turn off the setting which turns it all on automatically and also turn off the Do Not Disturb setting this should cure the problem👍🏻
