Has anyone experienced Google Pay not working on their S22U or any other Samsung device? And know the reason or fix for it? Samsung Support and Google Support were useless.

I've just used the latest Google wallet version that was updated a few days ago on my A53 without any issues today.

Once you have received the latest update and are no longer in beta, remove your bank card and add it again

I have the same problem and I have a theory. Did you transferred data to the new phone using Smart Switch?
