How do I install the one UI beta 5? Thanks

You will see when it becomes available here on the Members App
Usually a banner on the Discover page.
Currently in the UK it's not yet available

Once it becomes available in your region and if your phone is one of the eligible phone's that can run the Beta then there will be an invitation in the Samsung Members App @lynchy95 however do take into account this is a Beta and by its very nature can be buggy.

I wouldn't recommend to download this on your daily driver i.e main phone you use.

Is it pretty stable? Do banking/ GPay apps work ok?

Banks are working can't use Google wallet.

Seems stable, however only been running 24 hrs.
