I believe it's because unlike the iPhone which uses the phones main camera for these apps, the S21 Ultra and most other Android phones in general do not. They instead capture a screenshot of what the camera sees instead of a direct camera shot.
I generally just take photos using the camera app instead of using it from an app directly. It's a little longer to do but it's the best way to do it as it currently stands.
