Why am I unable to record blood oxygen levels, stress levels and heart rate anymore? Shows my history levels but not able to record new data.

Because you need the sensors to track SpO2, tachycardia and so forth. It needs a linked smartwatch in the newer smartphones.

Since when as up until recently it was able to do it from the app.

Not sure when they removed it. My s10 has it due to the infrared on the back next the cameras.

The s21 ultra I have has only a pedometer so only steps are recorded. Samsung health works as expected.

So I checked gsmarena for confirmation and the feature was removed in 2020 along with the introduction of tighter integration of smart watches.

I thought I'd used it since having my new s21 but perhaps not. Thought it might have been down to a new update but sounds like it's down to the change of phone 🤷‍♂️
