@momina19: The above option can be found by swiping up from your Home screen and heading to Settings > Battery and device care > Auto optimisation > Restart when needed.

If the above isn't applicable, then please try restarting your Galaxy S21 in Safe Mode, as this will disable all third party apps, and help to determine if the problem is stemming from an external source. To enter Safe Mode, press and hold the Power button until the 'Power off' prompt appears on the screen then release > Touch and hold Power off until the 'Safe mode' prompt appears then release > To confirm, tap Safe mode.

With Safe Mode active, please monitor the performance of the device for a few hours, depending on how frequently the restarts occur. If you notice an improvement, then please restart the phone as you would normally and uninstall and apps that you have added to the phone since you first encountered the issue.

We are so quick to blame our phones performance rather than the apps we load.

I would suggest seeking legal action, this is happening way too much after the recent updates, i have exactly the issue, I've changed the battery, did a factory reset but the issue still remains. No point talking to samsung fanboys on here, they will never acknowledge it's a software issue created by scamsung. It's always the s21 that does it and funnily enough after the recent updates... they basically want you to get the newer models, afterall the s21,s22 and s23 there's not much difference in the phones so if the s21 lasts 5 years, who's going to buy the newer models? Its a clear and blatant scam. If you go to samsung engineers they will fib you off by saying its a motherboard issue, knowing full well that no one is going to spend £350 on a new motherboard on a £300 phone!
