I have an idea, in the gallery app you should have the option to not play previews of videos when you go on an album, so they just appear still but with the video symbol in the corner until you press them, instead of playing part of each video in order automatically

Yes I completely agree. Its very annoying when you press play it not starting video from the begining but continuing play from preview .

Mine doesn't Auto Play anymore. I've messed about with so many settings on the phone that I'm not sure exactly what I pressed to get it to stop playing them?

You could try opening your Gallery to the Albums page, click the 3 horizontal Options lines on the bottom right of the page, click Settings, then switch off Auto Play Motion Photo's.
