I have nearly full 5g reception showing on my phone, i logged a fault with EE for network issues. They've got back to me saying there are no issues in my area. 
My S21 5g keeps losing connection, I'll be in the middle of listening to Spotify or using social media and my phone just won't load. Could this be something to do with my phone 'aereal' not working properly? Its only started happening recently and it's not always in the same place, I could be at work, walking the dogs, shopping etc I've missed important hospital calls and just get notification of a voicemail. It's getting ridiculous now.

I would contact EE first see if there is an issue with your SIM also have you tried to reset your phone and see if that fixes the issue

That's network issues the SIM sits in your phone.
You could try to reset your network settings go to settings generally management rest then try that
