On my s21 ultra I don't turn all features off that I want to use. I use 120hz, Bluetooth on for watch. But I do set a few bixby routines. Turning NFC on when no WiFi, so I can use it when I'm out if needed. In the evenings around 8 I have battery saving mode on location off, mobile data off. This routine finishes at 7 the next day in the morning. When my phone hits 30% I will have battery saving mode on. All these I have set up with routines. Check some videos out on you tube for routines. I found it helps quite a bit for me. Really pleased with the battery I get with this phone.
When I set wifi on at certain time period it don't turn on how weird straight away goes to mobile data on... and when I try to turn wifi on while that routine is set wifi doesn't allow me yo turn on 
Don't understand why you would spend so much money on a smart phone to then just dumb it down.
The S21 ultra is an easy 1 day phone with everything it has to offer.
2 days if you are not a gamer.
This is my day night and day usage 2days
I just keep everything adaptive or auto and let the phone do its magic.
Only thing is Location permissions are 'only when app is opened' for majority of the apps.
And background data is limited for most apps is off for which I feel its not needed .

One UI 5 has all these option under WiFi 3 dots intelligent WiFi options.
