Your phone would only receive a Beta software update if you have joined the Beta programme @Ezii 

If this update is from the Software Update section in your phone then it will be an official update.

Tap on the link at the bottom of the update and it'll take you to the page showing more about the update,

Hi, yes I did join, then installed one UI 4 and removed it immediately as it was so laggy, as I restored my phone the download came again as I removed myself from the beta program too late...

How can I stop this update ?

You should be able to cancel your participation by launching the Samsung Members app and navigating to Settings > Galaxy Beta Programme > Deregister.

S20+ 5G Exynos with Beta? The build is ZUK1, the Z means the firmware is Beta firmware.
