I've no personal experience with hooking up a phone to a car system so I can only suggest to conduct a search of this forum or Google Search if you haven't already and perhaps look for a car Community Forum or speak to your dealership @Scousejay1

The advice I offer is my own and does not represent Samsung’s position.
I'm here to help. " This is the way. "

it's a well known issue with the new phones I'm afraid and neither Samsung nor Google know how to resolve it. I keep checking for updates but nothing

The pressure should be mounted to Samsung, to get Mirrorlink back into the phones, because it was working greatly and surely an advantage compare to other apps including Android Auto, which only partly still works and function. We paid for this feature and Samsung just took it away, without any logical reason. Shame on Samsung

Go into the Android Auto app settings, clear the data (this allows a fresh start), then connect your phone to your head unit using the original USB cable (or, i found that a Juice cable, from Asda works). Upon connection, you should be asked if the head unit password matches the one on your phone. if it does, click to begin pairing. Press the appropriate button on your head unit that brings up Android Auto. on the bottom of the HU screen, you should see a white circle - this is where you access the apps. If the current view is (as an example) Spotify, by pressing this button, you should be able to switch over to Google Maps, etc.
