Hi recently updated to One UI , for the most part it's fine but I noticed I can no longer record in 4k. Also I don't have the ability to toggle the motion panorama on and off anymore . Any solutions ??

Go to the camera settings, Videos, Rear video size, then tap to the Resolution and tehre should be more options:
What you mean about the panorama? If you don't have it in a camera modes check if it is enabled in Settings -> Camera modes -> Edit modes
