Dear Samsung, please allow me to downgrade to last version of software!!! It IS LAGGING LIKE CRAZY ON MY GALAXY NOTE 20 ULTRA! I am talking always with adaptive display option ON. HELP HELP HELP!!!

Once you've downloaded a software update and allowed it there isn't a way to downgrade i.e revert back to the previous software via the phone's native settings @visage3 

 

You could consider a Custom Rom which you can find out more on the xdadevelopers.com website.

 

Disclaimer
Using a Custom Rom can bring about an unstable phone or it may not work properly if the process glitches or the wrong Rom is used.
A person takes full responsibility if they perform this process and do so at their own informed decision. Samsung would levy a charge to put this right.

 

However before this I'd suggest the following after a software update appears to make the phone sluggish etc.

 

1, Clear your phone's System Cache Files by turning your phone Off and then from a set series of button presses go into the phone's System Files and clear the cache. No information is lost this way. You may need to insert your headphones or hook upto a computer with your data cable to get to this menu on the phone. 

 

2. First please put the phone in Safe Mode which disables your downloaded app's but let's your stock app's keep working. If the issues stop then this highlights a downloaded app as the possible issue. Come out of Safe Mode and start deleting your most recent downloaded app's one at a time until it stops. 

 

3, A final resort is to back up and factory reset after removing any relevant sd card.

It's possible via using a Custom Rom @Barney0w however it's not a process to approach without learning properly how to do this and what to do if anything goes wrong.

I'm considering downgrading to Android 10 on my S20 Plus. I've worked with custom ROMs before on different devices, so it doesn't concern me - however there is one concern I do have: I assume that this will void the warranty, right?
I have the B. Purple special edition and apparently there is a firmware for it on XDA, but I just wanted to know if it's worth it.

As far as I'm aware @BluestBreeze  this process does not trip Knox ( please do double check  ), and to add if something goes wrong Samsung will put it right at a cost which they wouldn't do it warranty was voided.

It will trip Knox, unfortunately and it does void the warranty too. Future updates will be stopped fully, unless manually installed as well.
I'll have to stick with the official ROM after all and hope for some sort of update which will fix the things that bother me in Android 11.
