if you have wearable app on your phone, open that app, the on top left you see 3 vertical line click on it, then you will see manage device, click on it , if you will see all the devices connect to your phone like watches, ear bud ect .
click on the watch or device you want to remove, like the watch as you said, you then see option like remove at the bottom
