After 4 weeks of intense investigation into the poor streaming/connection we have been experiencing, I discover that my Samsung Galaxy A51 has been uploading continually to Samsung Cloud. This started around 24th April which is when the poor live stream quality started. I am assuming this is something to do with the move to OneDrive, but I still haven't resolved why. In the past 4 weeks, my wifi data usage has gone from a total of 60GB a month, to 462GB, of which 405GB was in the background to Samsung Cloud. The only way for us to live stream our teaching is to switch the phone to Flight Mode as I can't find a way of removing Samsung Cloud. I would remove the whole profile, but there are parts that I would like to keep. I'm ringing Samsung Account Support on Monday to see if they can offer a solution.

@Blaide: It is possible that you have enabled auto sync (Sync to Samsung Cloud) in some applications e.g. the Gallery app, and the sync is taking place while you are connected to Mobile data. If you swipe from the top of the screen to the bottom, then again to enlarge the Quick Panel, and disable Sync, then you can re-enable it when you are connected to a Wi-Fi network, and perform any necessary backups without affecting your data usage.
