I took out a contract with O2 through Buymobiles (A1 Comms) for the Galaxy A71 in blue a week ago. Mine is running One UI 2.1 Security patch level: 1 June 2020.
My Grandad has the same phone which I got through Buymobiles back in September when his upgrade was due.
His A71 is running One UI 2.5 Security patch level: 1 October 2020.
When I check on the software update menu in settings, it tells me that my software is up to date when clearly it isn't.
Can anybody share any light onto why this is?
Do I have a faulty device?

Updates are sent out in accordance to …
Region.
Phone Model.
Build / Serial number so some phone's will get the update before others @Lava087
I doubt your phone is “ faulty ”
Branded models i.e phone's supplied by a Network typically have their own flavour of software on i.e different CsC too.
Some Network's also ask Samsung to hold back on sending out updates until they've tested the software to ensure it does not conflict with their own network features etc.
Keep periodically checking your phone's software update section and if the setting is available there allow for automatic updates perhaps
You could also tey updating via Samsung Smartswitch.
You could also look at your Network's Help pages in regards to software updates / statements to see how they handle them.
