The watch isn't showing them or that they aren't showing in Samsung Health?
Installing Beta on the handset won't have any bearing on your watch as it's only the phone OS; the watch works independently on its own WearOS so there's no chance of it being affected. All I can suggest is maybe seeing if your Health app is updated on handset and also checking if there's anyupdates for the watch apps via playstore on the watch.
I'm running Beta on S22+ and have the Watch 4 BT edition; watch working as before recording everything and all records are being transferred to Health app on handset (which I'm liking the new look off).
