if the +/- values on the rear speakers are to be adjusted, does it also changes the volumes of their upfiring rear speakers or just the side ones?

As far as I know the upfiring rear speakers volume can be adjusted apart from the rear speakers. I am not at home right now but if you tap the 'settings' button you can select something like 'top rear' which are the upfiring rear speakers

Yes , rear surround with rear upfiring have diffirent setting option
