You can't remove Bixby as such but you can disable it.
You can set the Bixby button to turn off the phone as a power button if that is what you want, you can do this in the phone settings.
Other than that you need to turn off the phone via the pull down menu.
Problems with connection to your watch I'm fairly sure will not be Bixby related.
