Samsung have gone to lengths to stop Bixby being deleted @JayDT as its integrated deeply into the phones system files.
A person can use a package disabler from the Playstore but be careful as to what you disable !
You could look at using a Bixby button re-mapp app.
Google Search will pull up the various options you can use.
