S5e: Cannot create a restricted profile

According to the documentation it should be possible to choose between a normal user and a restricted profile after tapping on "Add user or profile". However, on my Tab S5e I cannot choose. The tab immediately creates a new (unrestricted) user without asking.

So how can I create a restricted profile?

The OP indicated they followed these instructions but they do not get the option shown in that last screenshot. Instead it just adds the account immediately.

I have the same issue with my Galaxy Tab S2 SM-T815Y - I've been pulling my hair out trying to find a solution to no avail.
