Change keyboard setting to another language

Does anybody know how I can change keyboard to enable me to learn a new language? I can see multiple options but cannot find Greek?

keyboard settings - manage input language and select Greek.

Thanks - 'Greek' is not an option available to select - however, I have found a way to do this.
