It's because the aspect ratio of the video is smaller than your phone

You would need to reach out to the video creator or the developer of the app you use to play it on.

As mentioned above, this is due to aspect ratios.

It's called ambient mode which can be turned of in the app's settings or the video itself is like that due to the ratio size it was recorded in or edited into

You can't, you can only room into the video because the aspect ratio is what the video you're watching was filmed in, so different videos will have different sized bars on the sides, and all you can do is zoom into the video, but then you lose some of the top and bottom.
