Settings > Accessibility > visibility enhancements. Make sure colour inversion is toggled off.

Make sure your phone is not in bedtime mode as that turns your phone screen black and white.

Settings > modes and routines, see if you have sleep turned on. Or type in grey scale in the search in settings. Make sure grey scale isn't on.

Mine has done this and I've tried all the obvious things but nothing will change it!
